In my never ending quest to fit more vegetables in to my diet, I tend to swap out carbs for veggies. I have spent many an evening spiralizing carrots and zucchini to make fake noodles. But my 100% favorite thing to swap in is cauliflower.
I can't believe I ignored this vegetable for so long! I've made substitutes for mashed potatoes, rice (I *love* cauliflower fried "rice") and last night I made cauliflower "mac" and cheese.
How about you guys? Any favorite sneaky veggie tricks.
