by Carrie Jurney ![]() I love to cook. It’s one of my favorite hobbies to unwind. I like to cook healthy and decidedly unhealthy foods in equal measure. However, I’ve been without a kitchen for six months (boo!) and my diet has gone to shit. I’ve gained weight and it has got to stop. I’m also training for a marathon, and my running coach has mentioned my diet really needs to change to achieve that goal. So it’s time to clean up my act! So, in my many wanderings through healthy cooking- I’ve fallen in love with vegetable swaps. My favorite recipe site currently is NomNomPaleo. I don’t follow the paleo diet hard core, but she has a lot of great vegetable swaps, especially for carb like cauliflower fried rice, or zucchini noodles. This allows me to have things I love (like pasta sauce and cheese) but stay in my calorie counts. So help me out guys. I really need to keep my momentum going. Any healthy recipe sites you love?
